This Thermomix honey nougat delight recipe was inspired by a ThermoFun Facebook liker who asked if it was possible to make a "Summer Roll" in the Thermomix. This was perfected after many attempts and is one of my most popular recipes. You must try to it!
I warn you though – this is wicked and it will not last long at all! :)

ThermoFun – Wicked Wednesday – Honey Nougat Delight

Ingredients
Nougat
- 200g milk chocolate melts
- 200g peanut butter
- 180g honey
- 190g oats
- 60g coconut, shredded
- 80g walnuts, crumbled
- 2 teaspoon ThermoFun Vanilla Bean Paste
Topping
- 200g milk chocolate melts
- 20g coconut oil
- coconut, to sprinkle on top
Instructions
Nougat
- Line a slice tin with baking paper.
- Place chocolate into TM bowl and grate 10 sec / speed 9.
- Scrape down and melt 4 mins / 50°C / speed 1.
- Add peanut butter and honey and melt 2 mins / 90°C / speed 1.
- Add oats, coconut, walnuts and vanilla and mix 30 sec / speed 4 / Reverse.
- Scrape mixture into prepared slice tin.
No need to wash TM bowl.
Topping
- Place chocolate and oil into TM bowl and grate 10 sec / speed 9. Scrape down and melt 5 mins / 50°C / speed 1.
- Pour melted chocolate on top of nougat in slice tin and sprinkle with coconut. Allow it to set in fridge for an hour.
- When set, cut into bars and enjoy!
To clean Thermomix bowl:
- Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
- Heat milk 5 mins / 80°C / speed 4.
- Enjoy warm chocolate milk. No wasted chocolate!

I made this recipe today, but instead of a slice, I used a cookie scoop and formed into balls. I got 47 balls. They went into the freezer while I melted Chocolate and coconut oil ( I did this old school in a bowl over simmering water to keep the chocolate fluid. I then dipped each ball and topped with a good pinch of shredded coconut. I wish I could post a photo to show you. They look a treat, pun intended. Lol

A most delicious slice I should never make again, but I will 😜 I made peacan & macadamia versions otherwise exactly with the recipe, I think I should have crushed the nuts more before adding them so I left reverse off in the final step.
Found the blades struggled and jammed with the second batch which I didn't pre-heat the honey in the microwave as much as the first batch. Unloaded half and turned on warming to finish processing.In colder climates I suggest warming the honey (and peanut paste if desired) 10-20sec in microwave before adding to the mix.

Can you make this with alternative nut butters such as hazelnut or almond or does this change the consistency. Previous attempts with almond butter were disastrous however reading feedback here suggests I didnt heat enough in the early steps.

Chez, I've not tried it, so I'd be wary in saying with this particular recipe that it would work with no problems. The reason being, the mixture is very sticky as it is, hence me being wary to do anything different without me actually testing it.

Made this again!! So in love! This time I added a shot of coffee to the milk at the end (cleaning bowl stage) and bucket loads of ice cream to make it into an iced mocha milkshake!!

Mmmm...made another batch of this on the weekend and forgot to add the 60g coconut with the oats and walnuts - no problems, still tasted yummy :-) how do you get your coconut to stay on top of the melted though Leonie? Mine always sinks in and disappears

Yum and freezes great. Slice it up and then just eat a bit at a time. Make sure you let it defrost though as it goes rock hard in freezer. But tastes great once defrosted.

Thank you, love it! I wonder if the recipe could suggest to chop the walnuts first and put aside before the chocolate grating step? That would save having to chop nuts by hand as bowl already full by that step.

Made with gluten free arrowroot biscuits (205g pack crushed up) instead of oats and it worked a treat! And it really does taste just like a Summer Roll! Not that I ever doubted, of course. ;)
I will confess: I made the mistake of cooking for an extra 45 seconds in step #3 because I thought maybe the melted mixture wasn't smooth enough. Bad idea. FOLLOW THE RECIPE, PEOPLE. Those extra seconds made the oils from the peanut butter start separating, so I had a slightly oily mix from there on, and had to soak up a couple of paper towels' worth once I'd pressed it all into the tray. Doh.
Despite my silliness, it all turned out okay, and I now have a seriously delicious, seriously easy-as slice on my hands!
And anyway, who doesn't love a recipe that ends by telling you to clean the bowl with a glass of milk and enjoy? :) Thanks, Thermofun!

I sooo want to try this, summer rolls have always been one of mine & my husband's favorite chocolate bars ? Am wondering if anyone has tried replacing the peanut butter tho as I've recently found out I have a mild peanut alergy ?

I made this tonight for my daughters physie comp tomorrow. Even better than the real honey nougat roll!!!
It set very quickly and is easy to wrap into individual portion (to sell with coffee).
It took ALOT of self control not to eat it all!!!

I finally made this for the first time a few days ago and it is amazing! It does taste just like a Summer Roll!! I spread it over two lamington tins to make a really nice, thin slice (to suit my family's tastes) and everyone loved it! I also used almonds instead of walnuts and blitzed them before starting as I'm not meant to be eating whole nuts at the moment.

this is just about my all time favourite chocolate recipe. It can be made as a slice, or work it into shapes, then cover with melted chocolate and roll in coconut. I need a lock for the fridge to stop me from eating them :-) Thanks for a truly great recipe :-)

I really don't know why this may happen. Just checking did you follow the method EXACTLY? Also I wonder if you perhaps got distracted and the choc and peanut butter thickened while you away from it? Just thoughts off the top of my head!

I read your recipe on my phone last night and quickly made it as the kids were toddling off to bed. Didn't have milk choc so used dark, didn't have walnuts so used macadamias. Left it to set and then cut a few slices to take to work this morning. Enjoyed it with workmates, but I told them I thought it was odd that it was called a Honey Nougat Slice when it had no honey in it! (It was dark, I was rushing, I dunno, but I didn't see any honey in the recipe at all.) Got home, kids had got into it and it was all gone!
Delicious! Will buy more ingredients tomorrow and make it all over again. It seriously DOES NOT NEED HONEY IN IT, THOUGH.Reply

I made this glute free with Quinoa flakes instead of oats. I also used cahews because I had not other nuts and no honey so I used golden syrup!
It was devine!!!! Im so glad I made it, I might even hid it in the fridge :)Reply

This is seriously the best thing ive ever tasted. I absolutely love honey nougat rolls so when i saw this recipe i just had to make it and i cant believe how close it came to the real thing. I used tahini instead of the peanut butter and swapped the walnuts for cashews. I took it to work and the first word that came out of everyones mouth was OMG so i think that should be what its called. Thanks for a winning slice

Really easy to make. I used a mix of dark and milk chocolate for the topping and it tasted very nice. I love the addition of the coconut oil that gives the chocolate more give when cutting and doesn't break. I will use that tip for all my slices in future.

Kelli I haven't tried it but you could perhaps replace with quinoa flakes or brown rice flakes. I'd love to hear how either go if you do try.

Kelli, I am not sure if you are aware that oats do not contain gluten. Gluten is only found in wheat, barley and rye.

Leanne, there are mixed views on gluten and oats. The main issue is cross contamination through farming. The UK don't advise against oats for coeliacs, whereas Australia does. As a coeliac, I cannot tolerate oats, however there are those who can. I have been told that some health food stores carry 'gluten free oats'.

You can buy uncontaminated gluten free American oats on line.I live in Hervey Bay Qld and we have a gluten free shop called Nannas.They r fabulous,u can virtually buy most gluten free flours etc bulk.Made my life a lot easier.

Oats have a different protein that isn't gluten but some people who cannot tolerate gluten also have allergies to the protein in oats. It's an individual thing.
