Hmmmmmm, hummus! Honestly, I always find chickpeas a bit strange (and am I the only one who finds them smelling weird?), but you can always wake me up for hummus! I have tasted the best hummus of my life ever in Israel, yum. Making hummus myself always seemed complicated, but it turns out not to be difficult at all!

Lebanese Hummus? Moroccan Hummus?

Hummus is originally from the Middle East, but is also made in North Africa, Turkey and well, all over the world. What is the difference between the hummus from different countries?

Actually, there is little difference; it’s only the proportions of the ingredients. Our recipe is based on an authentic Israeli hummus (because I really ate the best hummus of my life there). In Israel, according to Yotam Ottolenghi (in his book Jerusalem), there even were hummus wars!

How to Make Hummus

Actually, making hummus is very easy. You need a strong food processor (or blender), chickpeas, lemon juice, tahini, garlic, salt and (surprise:) ice cubes! Many recipes add water, but the hummus really gets a lot better in texture when you add ice cubes.

The hummus is served with extra virgin olive oil, paprika and parsley. The olive oil does NOT go in the hummus as that changes the structure (and not in a good way).

The big secret of creamy hummus: peeling the chickpeas. This sounds like a very tedious task, but we have a trick for you: fry the chickpeas with a spoon of baking soda. Then rinse the chickpeas and you will see the skins peel off much easier! If you really don’t feel like this, you can just use the chickpeas with skin, we won’t tell you!

Spicy Hummus

Also tasty: give your hummus some spice and toss in a hot pepper (with seeds!). And don’t just go for the standard chili pepper!

Hummus Variations

We found more hummus variations, which we used to make rainbow hummus! Certainly as a vegan, you can quickly be ‘bored’, because there are few other vegan spreads available. But by making mango hummus, roasted bell pepper hummus, or red cabbage hummus, for example, your hummus suddenly has a completely different taste.

Flatbread (No Yeast)

You can eat hummus delicious with Turkish bread and pita bread. But it is highly recommended to make flat bread (no yeast) yourself! With only 2 ingredients it is really easy and you can easily make it vegan.

Based on authentic Israeli recipe, this is the best hummus!

Ingredients

  • 1 cup chickpeas (200 gram)
  • 2 tablespoon lemon juice, juice of 1 lemon
  • 4 tablespoon tahini
  • 1-2 cloves garlic, according to taste
  • pinch of salt
  • 3 ice cubes
  • 1 hot pepper, optional

Serve with

  • olive oil , extra vierge
  • paprika powder
  • parsley

Instructions

  1. Optional: peel the chickpeas. This makes your hummus a lot softer. The trick to peeling faster is to fry the chickpeas with a tablespoon of baking soda for a few minutes. Then you can rub them together while rinsing and the peels will fall off!
  2. Keep a few chickpeas aside for serving. Mix all other chickpeas with the garlic in a blender or food processor.
  3. Add 3 ice cubes, the tahini, salt and lemon juice (possibly the red pepper for a spicy hummus) and mix in 4 minutes until smooth. Is your hummus still too thick? Add a bit of hot water to it.
  4. Serve with a few chickpeas, paprika, parsley and olive oil. And delicious homemade flatbread for example!

Notes

Save the chickpea's liquid! This is called 'aquafaba' and can be used to make meringues, or this tasty matcha dalgona latte.

    I followed the ice cube directions and was pleasantly surprised that it worked some magic on the final product normally I would work water in to get the texture right . Thank you for the tip .
