When we go to the mall, I am always tempted to buy those delicious Cinnamon and Sugar Pretzel bites sold in the food court. While they are tasty and smell heavenly, I usually can’t bring myself to pay those prices, especially for food that is far from healthy. Since I love trying to figure out recipes or make my own equivalent at home, I decided to give it a shot. Besides, what’s more fun than snuggling on the couch with a sweet treat while enjoying some awesome movies on Netflix?

Ingredients

  • 3 cups white all-purpose flour
  • 1 1/2 cups whole wheat all-purpose flour
  • 1 packet dry active yeast
  • 2 Tbsp. brown sugar
  • 1 1/2 cups warm water
  • 6 Tbsp. salted butter
  • 4 quarts of boiling water
  • 1/2 cup baking soda
  • 1 egg combined with 2 Tbsp, water for wash
  • 2 Tbsp. melted butter {Coating}
  • 2 Tbsp. sugar and cinnamon combination {Coating}

Instructions

  1. In the bowl of a stand mixer combine warm water, yeast, and sugar- stir and allow to sit for 5 minutes.
  2. Pour in melted butter, stir.
  3. While mixing a low setting add flour, mix well to combine.
  4. Turn speed to medium and continue to mix until dough pulls from sides of bowl and becomes smooth.
  5. If needed and dough seems too sticky add a bit more flour.
  6. Turn out onto a floured counter and knead a few times.
  7. Oil a large bowl well with canola or vegetable oil.
  8. Place dough in bowl, flip dough to coat, and cover- set aside and allow it to rise until doubled-approximately an hour.
  9. Preheat oven to 425°
  10. Separate dough into 6 smaller balls and roll each into a rope about 24” long.
  11. Slice off pieces about 1 1/2” long.
  12. After your large pan of water begins to boil, add baking soda.
  13. Drop in pretzel bites a dozen at a time and boil for 2 minutes.
  14. Remove with a slotted spoon or spider strainer to remove excess water.
  15. Place bites on a cookie sheet that has been sprayed with nonstick cooking spray.
  16. Brush generously with egg wash.
  17. Bake for 16-18 minutes or until golden brown.
  18. Allow to cool for 5 minutes.
  19. Toss pretzel bites in melted butter, and then roll in cinnamon and sugar mixture.
  20. Serve with the icing dip, melted chocolate, or strawberry cream cheese.
  21. {Optional} Icing Dip Instructions – Combine 1 tsp. Vanilla with 1 cup powdered sugar, add milk 2 Tbsp. at a time, stirring well, until desired consistency is reached.

    I love Cinnabon’s pretzels, so making a healthier version at home sounds like it’s right up my alley! I like how these don’t require the deep-frying! It’s interesting that the bites are boiled in water, sort of like gnocchi! I’ll have to try this some time soon because I’ve been wanting to make a dessert-like snack that excludes cakes and cookies!
