  1. PREP. Preheat oven to 400°F
  2. DRY INGREDIENTS. In a large bowl mix flour, brown sugar, sugar, baking powder, and salt. Mix well.
  3. WET INGREDIENTS. In a medium bowl, beat together milk, butter, eggs, and vanilla until well combined. Add dry ingredients and beat until just combined. DO NOT over-mix.
    • Fold in chocolate chips.
  4. BAKE. Spoon the batter into a muffin tin filled with cupcake liners. Fill them to about ⅔ or 3/4 full.
    • Sprinkle tops with sugar and bake for 16-18 minutes.
    • Test for doneness by inserting a toothpick into the center. When it comes out clean or with a few crumbs they are done.
  5. Cool. Allow the muffins to cool a bit in the pan before placing them on a wire rack to cool completely.

Pro Tip!

Before baking, sprinkle a few extra chocolate chips on top with the sugar—this makes the muffins look prettier when they come out of the oven!

Recipe Tips

Keep the following tips in mind to produce the best recipe for chocolate chip muffins every time!

  • Liners. Simple paper liners or silicone liners work well in the recipe. The higher the quality of the paper liners the less the baked muffins will stick to it when removed. Or bake the cupcakes directly in the muffin pan which creates a nice browned crust.
  • Different-sized muffins. For jumbo muffins bake for 5 minutes at 425°F and then reduce the temperature to 350°F and bake for another 20-25 minutes. For mini muffins bake for only 10-12 minutes at 350°F. You may wish to use mini chocolate chips. (Times may vary slightly depending on your oven.)
  • Nuts. Add chopped nuts for even more flavor and texture.

What is the secret to high muffins? ›

Chilling your muffin batter overnight in the fridge is the BEST thing you can do for amazing muffins. It makes them more moist, tender, and TALLER! It's very similar to chilling cookie dough, which if you know me you know I'm obsessed with chilling cookie dough.

Why are bakery muffins so much better? ›

The best bakery-style crumb muffins start with cake flour

Cake flour is more finely ground and has less protein, which leaves the muffins with a fine, light crumb and soft texture. Using cake flour is an easy way to avoid heavy, dense muffins even if you end up stirring just a bit too much.

What's the difference between muffins and cupcakes? ›

Another important difference between a cupcake and a muffin is that cupcakes tend to have more sugar and so they're a lot sweeter than muffins. They also tend to be decorated with a variety of delicious frostings. Muffins, on the other hand, can come with a range of fillings like jam, chocolate, nuts or fruits.

Should you use butter or oil in muffins? ›

Many muffin recipes use cooking oil instead of butter. Oil, being a liquid, distributes easily in the quick-mix batter and is readily absorbed into the baked muffin, producing a light non-greasy texture. Vegetable oil is ideal because its mild flavour doesn't compete with the main flavour of the muffin.

What does adding an extra egg do to muffins? ›

Eggs are responsible for giving baked goods structure, which means the amount you use directly affects the resulting texture. Using too few eggs will make your desserts dense, but using too many will make them rubbery.

Should you let muffin batter rest? ›

Rest the Muffin Batter

The first, most hands-off way to make your muffins pop (literally) is to let the batter rest. Make the batter, cover the bowl with plastic wrap, and let the batter rest at room temperature for about 1 hour. If you're short on time, just 30 minutes can make a difference.

What does adding more eggs do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

What is the most common flaw when baking muffins? ›

Overmixing is a common problem with muffins. First combine dry ingredients, mixing well. Then combine liquid ingredients, mixing well. Finally combine dry and wet ingredients, by hand, using only 15 to 20 light strokes.

How to get domed muffins? ›

When I was researching muffin recipes for #weeknightbakingbook, I discovered that muffins dome really well when first baked at a high temperature like 425 (F). Doing so encourages the baking powder in the batter to react faster, causing the muffins to rise more quickly in the oven.

What is the most important rule to follow when baking muffins? ›

The number one rule for successful muffins is: Don't over-mix the batter. Use a rubber spatula to quickly fold (gently stir) the liquid ingredients into the dry ones. A few streaks of flour still showing is okay, especially if you plan to add in extra ingredients like fruits and nuts.

What temp should you cook muffins? ›

That being said, the standard oven temperature for baking desserts like quick breads and muffins is commonly set to 350 degrees Fahrenheit. Setting your oven to this temperature will almost always produce a well-cooked muffin recipe.

Why do my muffins come out dry? ›

If the muffins are dry, it is possible that they were baked for slightly too long. The oven temperature is slightly higher that you would normally use for cakes, as this helps to give the muffins nicely domed tops, a good crust and a moist interior. This means that the baking time is only 15-20 minutes.

Is cupcake batter the same as muffin batter? ›

Cupcake recipes generally have more sugar and fat (butter, oil, or dairy) than muffins and may include ingredients like whipped eggs or even mayo for texture. And yes, cupcakes almost always include frosting. Muffins, on the other hand, are typically mixed with the muffin method no matter their flavor.

What to add to muffin mix to make it moist? ›

Oil & Butter: Oil produces a moist, tender muffin. Combine with melted butter for extra fat, moisture, and a little flavor. Milk: Milk adds plenty of moisture and lightens up the crumb.

How do you make muffins less dry after baking? ›

LiveStrong explains you can save your slightly overbaked treats by adding back in some moisture. All you have to do is brush the tops of your muffins with a bit of milk before they completely cool. If you really went too far, you can also try steaming your muffins when you're ready to eat them.
